Holy Basil Beef (Pad Krapow Neua)
Thin slices of beef stir-fried hot and fast with garlic, chillies, red pepper and holy basil.
Ingredients
- 400g beef sirloin or rump steak, very thinly sliced
- 3 tbsp vegetable oil, plus 4 tbsp for the eggs
- 8 cloves garlic, roughly chopped
- 6 bird's eye chillies, roughly chopped
- 1 red pepper, cut into thin strips
- 100g long beans or green beans, cut into 4cm lengths
- 1 tbsp oyster sauce
- 1 tbsp light soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp fish sauce
- 1 tsp caster sugar
- 3 tbsp water
- 2 large handfuls holy basil leaves, from Thai shops, or Thai basil
- 4 eggs
- 300g jasmine rice, to serve
Method

Cook the rice according to the packet instructions and keep warm.

Mix the oyster sauce, light soy, dark soy, fish sauce, sugar and water in a small bowl.

Pound the garlic and chillies to a coarse paste, or chop very finely.

Heat the 3 tbsp oil in a wok over the highest heat until smoking. Fry the garlic and chilli for 15 seconds, then add the beef in a single layer and sear for 1 minute without moving.

Add the red pepper and long beans and stir-fry for 2 minutes. Pour in the sauce and toss for 1 minute until the beef is just cooked and glossy.

Turn off the heat and fold in the basil until just wilted.

Heat the 4 tbsp oil in a frying pan until very hot and fry the eggs for 1 to 2 minutes until crisp at the edges with runny yolks.

Serve the beef over the rice, each portion topped with a fried egg.
