Garlic Bok Choy

Tender-crisp bok choy stir-fried over high heat with plenty of garlic and a splash of Shaoxing wine.

Ingredients

  • 500g bok choy (about 4 heads), halved or quartered lengthways
  • 2 tbsp vegetable oil
  • 6 cloves garlic, finely sliced
  • 1 tbsp Shaoxing rice wine
  • 1 tbsp light soy sauce
  • 1/2 tsp caster sugar
  • 1/4 tsp fine salt
  • 2 tbsp water
  • 1/2 tsp toasted sesame oil

Method

  1. Wash the bok choy well, spreading the leaves to rinse out any grit. Drain and shake dry.

  2. Mix the Shaoxing wine, soy sauce, sugar, salt and water in a small bowl.

  3. Heat the oil in a wok over a high heat. Add the garlic and stir for 10 to 15 seconds until fragrant but not browned.

  4. Add the bok choy and toss for 1 minute. Pour in the sauce and cover for 1 minute until the stems are just tender but still bright and crisp.

  5. Uncover, toss for 20 seconds to reduce the liquid, drizzle with sesame oil and serve at once.
