Beef Pepper Fry

A hot Kerala beef fry coated in freshly crushed black pepper, shallots and curry leaves.

Ingredients

  • 1kg beef braising steak, cut into 3cm pieces
  • 1 tsp ground turmeric
  • 2 tsp Kashmiri chilli powder
  • 1 tbsp ground coriander
  • 1 tbsp fresh root ginger and garlic paste
  • 1 1/2 tsp salt
  • 400ml water
  • 4 tbsp coconut oil
  • 10 banana shallots or 8 round shallots, finely sliced
  • 3 green chillies, slit lengthways
  • 15 fresh curry leaves
  • 1 1/2 tbsp black peppercorns, coarsely crushed
  • 1 tsp garam masala

Method

  1. Put the beef in a heavy pan with the turmeric, chilli powder, coriander, ginger and garlic paste, salt and water. Bring to the boil, cover and simmer on a low heat for 1 hour 30 minutes until tender. Uncover and cook until only a little thick liquid remains.

  2. Heat the coconut oil in a wide pan over a medium heat. Cook the shallots, green chillies and half the curry leaves for 10 minutes until golden.

  3. Add the beef with its remaining liquid and the crushed peppercorns. Stir-fry on a medium-high heat for 15 minutes until the beef is dark, dry and well coated.

  4. Stir in the garam masala and the remaining curry leaves and cook for 2 minutes. Serve with parotta or rice.
