Juicy minced lamb kebabs with ginger, green chilli and garam masala, grilled on skewers.

Ingredients

  • 600g lamb mince, about 20% fat
  • 1 onion, grated and squeezed dry
  • 1 tbsp fresh root ginger, finely grated
  • 1 tbsp garlic paste
  • 3 green chillies, finely chopped
  • 3 tbsp chopped fresh coriander
  • 2 tbsp chopped fresh mint
  • 2 tbsp gram flour (besan), dry-roasted
  • 1 tsp ground cumin
  • 1 tbsp ground coriander
  • 1 1/2 tsp garam masala
  • 1 tsp Kashmiri chilli powder
  • 1 tsp salt
  • 2 tbsp vegetable oil, plus extra for brushing
  • Lemon wedges, sliced red onion and mint chutney, to serve

Method

  1. Put the mince in a large bowl with the onion, ginger, garlic paste, green chillies, coriander, mint, gram flour, spices, salt and the 2 tbsp oil.

  2. Knead the mixture firmly with your hands for 5 minutes until it turns sticky and paste-like. Cover and chill for at least 30 minutes.

  3. Heat the grill to its highest setting and line a baking tray with foil. Wet your hands and press a golf-ball-sized portion of the mixture around a flat metal skewer, shaping it into a sausage about 12cm long. Make 12.

  4. Brush the kebabs lightly with oil. Grill about 10cm from the heat for 5 minutes on each side, turning carefully, until browned and cooked through.

  5. Slide off the skewers and serve with lemon wedges, sliced onion and mint chutney.
