Instant Pot Bacon & Pea Pasta
Smoked bacon, sweet peas and pasta in a creamy sauce, made in one pot.
Ingredients
- 1 tbsp vegetable oil
- 8 rashers smoked streaky bacon, chopped
- 1 large onion, chopped
- 2 cloves garlic, crushed
- 300g penne
- 450ml hot chicken stock (1 stock cube)
- 150g frozen peas
- 100g full-fat soft cheese
- 50g mature Cheddar, grated
- Salt and black pepper to taste

Select Sauté and heat the oil. Cook the bacon for 5 minutes until golden. Add the onion and cook for 3 minutes, then add the garlic and cook for 1 minute.

Pour in the stock and scrape up any stuck-on bits from the base of the inner pot; this prevents a Burn notice. Add the pasta and push it under the liquid.

Lock the lid, set the steam release valve to Sealing and select Pressure Cook (High) for 4 minutes.

When the time is up, carefully turn the valve to Venting for a quick release.

Select Sauté, add the peas and soft cheese and stir for 2 minutes until the cheese has melted and the peas are hot.

Press Cancel, season with plenty of black pepper and scatter over the Cheddar. Serve straight away.
