Instant Pot Rice Pudding

Ingredients

  • 100g pudding rice
  • 250ml water
  • 1 tbsp butter
  • 500ml whole milk
  • 50g caster sugar
  • 1 tsp vanilla extract
  • Freshly grated nutmeg, to serve

Method

  1. Rinse the rice, then put it in the inner pot with the water and butter. Lock the lid, set the steam release valve to Sealing and select Pressure Cook (High) for 5 minutes.

  2. When the time is up, leave the pot to release pressure naturally for 10 minutes, then carefully turn the valve to Venting to release any remaining steam.

  3. Stir in the milk, sugar and vanilla. Select Sauté and cook for 8 to 10 minutes, stirring constantly, until thick and creamy.

  4. Press Cancel. The pudding thickens as it cools, so add a splash more milk if you prefer it looser. Serve warm, topped with nutmeg.
