Ingredients

  • 4 skin-on salmon fillets, about 150g each
  • For the glaze: 3 tbsp white miso paste
  • For the glaze: 2 tbsp mirin
  • For the glaze: 1 tbsp caster sugar
  • For the glaze: 1 tbsp light soy sauce
  • 1 tbsp sunflower oil
  • 1 tbsp white sesame seeds, toasted
  • 2 spring onions, finely sliced
  • Cooked short-grain rice and steamed greens, to serve

Method

  1. Mix the miso, mirin, sugar and soy sauce until smooth. Spread over the salmon fillets, cover and marinate in the fridge for 2 hours.

  2. Preheat the oven to 200°C (180°C fan). Wipe off most of the excess marinade, which can burn, and brush a baking tray with the oil.

  3. Place the salmon skin-side down on the tray and bake for 12 to 15 minutes until just cooked through. Finish under a hot grill for 1 to 2 minutes if you want a darker glaze.

  4. Scatter over the sesame seeds and spring onions and serve with rice and steamed greens.
