Ingredients

  • 800ml water
  • 2 tsp dashi granules
  • 3 tbsp miso paste
  • 200g silken or soft tofu, cut into 1.5cm cubes
  • 3 spring onions, finely sliced

Method

  1. Bring the water to a gentle simmer in a saucepan, add the dashi granules and stir until dissolved.

  2. Put the miso paste in a small bowl or ladle, add a ladleful of the hot dashi and whisk until smooth. Reduce the heat to very low.

  3. Add the tofu to the pan and heat gently for 2 minutes. Stir in the miso mixture and do not let the soup boil, as boiling dulls the flavour of the miso.

  4. Ladle into small bowls, scatter over the spring onions and serve straight away.
