Abdoogh Khiar

Abdoogh khiar is a chilled Persian summer soup of yoghurt, cucumber, herbs, raisins and walnuts, served with torn bread.

Ingredients

  • 500g full-fat plain yoghurt
  • 250ml cold water
  • 1 large cucumber (about 300g), diced small
  • 50g raisins
  • 50g walnuts, roughly chopped
  • 2 tbsp fresh dill, finely chopped
  • 2 tbsp fresh mint, finely chopped
  • 2 spring onions, finely sliced
  • 1 tbsp dried rose petals (optional)
  • ½ tsp salt, or to taste
  • Black pepper
  • Ice cubes
  • 2 lavash or other flatbreads, torn into 2cm pieces

Method

  1. Whisk the yoghurt with the cold water until smooth. Season with salt and pepper.

  2. Stir in the cucumber, raisins, walnuts, herbs and spring onions.

  3. Chill for at least 1 hour.

  4. Ladle into bowls, add ice cubes and scatter with rose petals. Add the torn bread just before serving so it stays chewy.
