Kuku Sibzamini

Kuku sibzamini is a Persian potato frittata: mashed potato bound with egg, onion and saffron, and fried to golden patties.

Ingredients

  • 4 medium potatoes (about 700g)
  • 3 large eggs
  • 1 medium onion, finely grated and squeezed dry
  • ½ tsp ground turmeric
  • ¼ tsp saffron threads, ground and steeped in 2 tbsp hot water
  • 2 tbsp plain flour
  • ½ tsp baking powder
  • 1 tsp salt
  • ½ tsp black pepper
  • 6 tbsp sunflower oil, for frying

Method

  1. Boil the whole potatoes in salted water for 25 minutes until tender. Peel, cool for 10 minutes and mash coarsely.

  2. Mix in the eggs, onion, turmeric, saffron water, flour, baking powder, salt and pepper until combined.

  3. Heat 2 tbsp oil in a non-stick frying pan over a medium heat. Spoon in the mixture in 8cm patties, about 2cm thick, and cook in batches for 4-5 minutes per side until golden and crisp.

  4. Drain on kitchen paper and serve warm with yoghurt, pickles and flatbread.
