Panir Sabzi

Panir sabzi, often called sabzi khordan, is the fresh herb platter served at almost every Persian meal: white cheese, walnuts, herbs and radishes with flatbread.

Ingredients

  • 200g feta cheese, cut into slabs
  • 100g walnut halves
  • 30g fresh basil
  • 30g fresh mint
  • 20g fresh tarragon
  • 30g fresh coriander
  • 30g fresh flat-leaf parsley
  • 1 bunch radishes (about 100g), trimmed
  • 4 spring onions, trimmed
  • 4 lavash or other flatbreads

Method

  1. Rinse the herbs, radishes and spring onions in cold water and dry thoroughly. Pick the herbs into sprigs.

  2. Arrange the herbs, radishes and spring onions on a large platter with the feta and walnuts.

  3. Serve with warm flatbread. To eat, wrap a piece of cheese, a walnut and a few herb sprigs in a piece of bread.
