Faloodeh Shirazi

Faloodeh Shirazi is an ancient frozen dessert of thin rice noodles in a rosewater syrup, frozen into crisp ice crystals and served with lime juice.

Ingredients

  • 200g caster sugar
  • 250ml water
  • 3 tbsp rosewater
  • 50g thin rice vermicelli
  • To serve:
  • Fresh lime juice
  • Sour cherry syrup (optional)

Method

  1. Bring the sugar and water to the boil, simmer for 5 minutes and cool. Stir in the rosewater.

  2. Cook the vermicelli in boiling water for 3-4 minutes until tender, drain and rinse under cold water. Cut into short lengths.

  3. Mix the noodles with the syrup and pour into a shallow freezerproof container.

  4. Freeze for 45 minutes, then scrape with a fork to break up the ice crystals. Repeat every 45 minutes for 4-5 hours until the mixture is a mass of crisp crystals.

  5. Scoop into chilled glasses and serve with lime juice and sour cherry syrup to taste.
