Gambas al Ajillo (Garlic Prawns)

Sizzling king prawns in garlic, chilli and sherry, served with bread to mop up the oil.

Ingredients

  • 400g raw peeled king prawns, defrosted if frozen
  • 6 tbsp olive oil
  • 6 cloves garlic, thinly sliced
  • 1/2 tsp dried chilli flakes
  • 1 tsp sweet smoked paprika
  • 2 tbsp dry sherry
  • 2 tbsp chopped fresh flat-leaf parsley
  • Crusty bread, to serve
  • Flaky sea salt to taste

Method

  1. Pat the prawns dry with kitchen paper and season with salt.

  2. Heat the oil in a large frying pan or small cazuela over a low-medium heat. Add the garlic and chilli flakes and cook gently for 2 minutes until the garlic is just starting to turn golden.

  3. Turn up the heat to medium-high, add the prawns and paprika and cook for 1 to 2 minutes on each side until pink.

  4. Add the sherry and let it bubble for 30 seconds. Scatter over the parsley and serve straight away, sizzling, with crusty bread.
