Huevos Rotos con Jamón (Broken Eggs with Potatoes and Serrano Ham)

Crisp fried potatoes topped with runny fried eggs and serrano ham, broken at the table.

Ingredients

  • 700g potatoes, peeled and cut into 1cm chips
  • 150ml olive oil, for frying
  • 4 large eggs
  • 80g serrano ham
  • Flaky sea salt, to taste
  • Black pepper to taste

Method

  1. Dry the potatoes well with a clean tea towel. Heat the oil in a large, deep frying pan over a medium heat. Never leave hot oil unattended.

  2. Fry the potatoes in 2 batches for 12 to 15 minutes, stirring occasionally, until golden and tender. Lift out with a slotted spoon, drain on kitchen paper and season with salt.

  3. Pour off all but 2 tbsp of the oil and heat over a medium-high heat. Fry the eggs for 2 to 3 minutes until the whites are set and crisp at the edges and the yolks are runny.

  4. Pile the potatoes onto warm plates, top each with a fried egg and scatter over the ham. Break the yolks at the table and mix them through the potatoes.
