Lomo de Cerdo al Ajillo (Garlic Pork Loin)

Pan-fried pork loin steaks in a garlicky white wine and paprika sauce.

Ingredients

  • 4 pork loin steaks, about 600g in total
  • 3 tbsp olive oil
  • 6 cloves garlic, thinly sliced
  • 1 tsp sweet smoked paprika
  • 100ml dry white wine
  • 100ml chicken stock (1/2 stock cube)
  • 2 tbsp chopped fresh flat-leaf parsley
  • Salt and black pepper to taste

Method

  1. Season the pork steaks. Heat the oil in a large frying pan over a medium-high heat and fry for 4 to 5 minutes on each side until golden and cooked through. Transfer to a plate and keep warm.

  2. Reduce the heat to medium, add the garlic and cook for 1 minute until just golden. Stir in the paprika.

  3. Pour in the wine and let it bubble for 2 minutes. Add the stock and simmer for 3 to 4 minutes until reduced by half.

  4. Return the pork to the pan with any resting juices for 1 minute. Scatter over the parsley and serve.
