Patatas a lo Pobre (Poor Man's Potatoes with Peppers and Onions)

Thinly sliced potatoes slowly cooked in olive oil with peppers, onions and garlic.

Ingredients

  • 800g waxy potatoes, peeled and sliced 3mm thick
  • 2 onions, thinly sliced
  • 2 green peppers, thinly sliced
  • 4 cloves garlic, sliced
  • 120ml olive oil
  • 2 tbsp white wine vinegar
  • 2 tbsp chopped fresh flat-leaf parsley
  • Salt and black pepper to taste

Method

  1. Heat the oil in a large, deep, lidded frying pan over a medium-low heat. Add the potatoes, onions, peppers and garlic with 1 tsp salt and stir to coat in the oil.

  2. Cover and cook for 30 to 35 minutes, stirring gently every 5 minutes, until the potatoes are completely tender and golden at the edges.

  3. Remove the lid, increase the heat to medium and cook for 5 minutes to crisp the edges.

  4. Sprinkle over the vinegar, season with pepper, scatter over the parsley and serve.
