Ingredients

  • 600g pork shoulder or loin, cut into 2.5cm cubes
  • 3 tbsp olive oil
  • 1 tbsp sherry vinegar
  • 3 cloves garlic, crushed
  • 2 tsp sweet smoked paprika
  • 1 tsp ground cumin
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1 tsp dried oregano
  • 1 tsp salt
  • 1 lemon, cut into wedges
  • 8 wooden skewers

Method

  1. Mix the oil, vinegar, garlic, paprika, cumin, coriander, turmeric, oregano and salt in a bowl. Add the pork and turn to coat, then cover and marinate in the fridge for at least 2 hours, or overnight.

  2. Soak the wooden skewers in cold water for 30 minutes. Preheat the grill or a griddle pan to high.

  3. Thread the pork onto the skewers. Grill or griddle for 10 to 12 minutes, turning occasionally, until charred in places and cooked through.

  4. Rest for 3 minutes and serve with the lemon wedges.
