Torrijas (Spanish Sweet Fried Bread)

Bread soaked in cinnamon and lemon milk, dipped in egg and fried until golden, a Spanish Easter treat.

Ingredients

  • 8 slices day-old brioche or thick white bread, 2cm thick
  • 500ml whole milk
  • 1 cinnamon stick
  • 1 strip lemon peel
  • 50g caster sugar
  • 2 large eggs, beaten
  • About 150ml sunflower oil, for frying
  • For the coating: 4 tbsp caster sugar
  • For the coating: 1 tsp ground cinnamon
  • Runny honey, to serve

Method

  1. Heat the milk, cinnamon stick, lemon peel and 50g sugar in a saucepan until steaming. Remove from the heat and infuse for 15 minutes, then strain into a shallow dish and cool.

  2. Mix the coating sugar and cinnamon on a plate. Dip each slice of bread into the milk for 20 to 30 seconds on each side, until soaked but not falling apart.

  3. Heat the oil in a large frying pan over a medium heat. Dip each soaked slice in the beaten egg and fry for 2 to 3 minutes on each side until deep golden. Drain on kitchen paper.

  4. Roll in the cinnamon sugar, drizzle with honey and serve warm.
