Menestra de Verduras (Spanish Mixed Vegetable Stew)

Spring vegetables, artichokes and serrano ham in a light white wine sauce.

Ingredients

  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 3 cloves garlic, sliced
  • 80g serrano ham, diced
  • 2 carrots, sliced
  • 200g green beans, trimmed and cut into 3cm pieces
  • 250g asparagus, trimmed and cut into 4cm pieces
  • 400g tin artichoke hearts, drained and quartered
  • 100g frozen peas
  • 1 tbsp plain flour
  • 100ml dry white wine
  • 300ml vegetable stock (1 stock cube)
  • 2 tbsp chopped fresh flat-leaf parsley
  • Salt and black pepper to taste

Method

  1. Heat the oil in a large frying pan over a medium heat and cook the onion for 5 minutes. Add the garlic and ham and cook for 2 minutes.

  2. Stir in the flour for 1 minute, then pour in the wine and let it bubble for 2 minutes. Add the stock and carrots and simmer for 8 minutes.

  3. Add the green beans and cook for 5 minutes, then add the asparagus, artichokes and peas and cook for 5 to 6 minutes until all the vegetables are tender.

  4. Season to taste, scatter over the parsley and serve with crusty bread.
