Aguachile de Camarón

Raw prawns bathed in a vivid green lime and chilli sauce with cucumber and red onion, fresh and fiery.

Ingredients

  • 500g raw peeled king prawns, very fresh, deveined
  • Juice of 8 limes
  • 2 serrano or green finger chillies, roughly chopped
  • Small bunch fresh coriander, stalks and leaves
  • 1 clove garlic, peeled
  • 1/2 tsp fine salt
  • 1 cucumber, peeled and thinly sliced
  • 1/2 red onion, very thinly sliced
  • 1 ripe avocado, sliced
  • Tostadas or tortilla chips, to serve

Method

  1. Butterfly the prawns by slicing lengthways almost through, then open out and lay flat on a chilled plate.

  2. Blend the lime juice, chillies, coriander, garlic and salt until completely smooth, then strain.

  3. Pour the green sauce over the prawns and leave for 10 minutes until they turn opaque and pink.

  4. Arrange the cucumber and red onion over and around the prawns.

  5. Add the avocado slices.

  6. Serve immediately with tostadas or tortilla chips.
