Ceviche de Pescado

Spanking-fresh white fish cured in lime juice with chilli, red onion, tomato and coriander, served chilled.

Ingredients

  • 500g very fresh skinless sea bass or sea bream fillets, labelled suitable for eating raw
  • Juice of 6 limes
  • 1/2 red onion, finely sliced
  • 1 jalapeño, deseeded and finely chopped
  • 2 ripe tomatoes, deseeded and diced
  • Small bunch fresh coriander, chopped
  • 1 tsp fine salt
  • 1 ripe avocado, diced
  • 1 tbsp extra virgin olive oil
  • 8 corn tostadas or tortilla chips, to serve

Method

  1. Cut the fish into 1cm cubes, keeping it very cold, and place in a non-reactive glass bowl.

  2. Pour over the lime juice so the fish is covered, then add the salt and stir. Chill for 20 minutes until the fish turns opaque.

  3. Soak the sliced onion in cold water for 5 minutes, then drain.

  4. Pour off about half the lime juice from the fish.

  5. Stir in the onion, jalapeño, tomatoes, coriander and olive oil.

  6. Fold through the avocado gently and serve immediately on tostadas or with tortilla chips.
