Huevos Rancheros
Fried eggs on crisp tortillas with warm refried beans and a smoky, spicy tomato ranchero sauce.
Ingredients
- 2 tbsp vegetable oil, plus extra for frying
- 1/2 white onion, finely chopped
- 2 cloves garlic, crushed
- 1 jalapeño, finely chopped
- 400g tin chopped tomatoes
- 1/2 tsp ground cumin
- 1/2 tsp dried oregano
- 1/2 tsp fine salt
- 8 small corn tortillas
- 400g tin refried beans, warmed
- 8 eggs
- 100g queso fresco or mild feta, crumbled
- 1 ripe avocado, sliced
- Small bunch fresh coriander, chopped
Method

Heat the oil in a pan and soften the onion for 5 minutes. Add the garlic and jalapeño and cook for 1 minute.

Add the tomatoes, cumin, oregano and salt and simmer for 12 minutes until thick. Blend for a smoother sauce if you prefer.

Heat a little oil in a frying pan and fry the tortillas for 30 seconds per side until lightly crisp. Drain on kitchen paper.

Spread each tortilla with refried beans and arrange two on each plate.

Fry the eggs in a little oil until the whites are set and the yolks are still runny.

Top each tortilla with an egg, spoon over the warm sauce, then finish with cheese, avocado and coriander.
