Churros
Crisp, golden ridged fritters rolled in cinnamon sugar and served with a thick, glossy chocolate dipping sauce.
Ingredients
- 250ml water
- 50g butter
- 1 tbsp caster sugar
- 1/4 tsp fine salt
- 125g plain flour
- 1 egg
- 1 tsp vanilla extract
- Vegetable oil, for deep frying
- 100g caster sugar
- 2 tsp ground cinnamon
- 150g dark chocolate, 70% cocoa, chopped
- 150ml double cream
Method

Heat the water, butter, 1 tbsp sugar and salt in a pan until the butter melts and the mixture boils. Remove from the heat.

Tip in the flour all at once and beat with a wooden spoon until a smooth dough forms. Cool for 5 minutes, then beat in the egg and vanilla.

Spoon the dough into a piping bag fitted with a large star nozzle.

Heat 6cm of oil in a deep pan to 180°C. Pipe 12cm lengths into the oil, cutting with scissors, and fry in batches for 3 to 4 minutes until golden. Drain on kitchen paper.

Mix the caster sugar and cinnamon on a plate and roll the hot churros in it.

For the sauce, heat the cream until steaming, pour over the chocolate and stir until smooth. Serve alongside for dipping.
