A cool, creamy rice drink flavoured with cinnamon and vanilla, refreshing and lightly sweet over ice.

Ingredients

  • 200g long-grain white rice
  • 2 cinnamon sticks
  • 1 litre water
  • 500ml whole milk
  • 100g caster sugar
  • 1 tsp vanilla extract
  • 1/2 tsp ground cinnamon
  • Pinch of fine salt
  • Ice, to serve
  • Ground cinnamon, to serve

Method

  1. Blend the rice in a dry blender for 1 minute until coarsely ground.

  2. Place the rice and cinnamon sticks in a large bowl, pour over 500ml of the water and soak at room temperature for at least 8 hours, or overnight.

  3. Remove the cinnamon sticks and blend the rice and soaking water for 2 minutes until very smooth.

  4. Strain through a fine sieve lined with muslin, squeezing out all the liquid.

  5. Stir in the remaining water, milk, sugar, vanilla, ground cinnamon and salt until the sugar dissolves.

  6. Chill thoroughly, stir well and serve over ice with a dusting of cinnamon.
