Camarones al Mojo de Ajo

King prawns sizzled in butter and olive oil with plenty of golden garlic, lime and a gentle chilli kick.

Ingredients

  • 700g raw peeled king prawns
  • 60g butter
  • 3 tbsp olive oil
  • 10 cloves garlic, thinly sliced
  • 2 dried guajillo chillies, stalks and seeds removed, cut into thin rings
  • 1/2 tsp fine salt
  • 1/4 tsp black pepper
  • Juice of 2 limes
  • Small bunch fresh coriander, chopped
  • Cooked rice or warm corn tortillas, to serve

Method

  1. Pat the prawns dry and season with the salt and pepper.

  2. Heat the butter and oil in a large frying pan over a medium heat. Add the garlic and chilli rings and cook for 2 to 3 minutes, stirring, until the garlic is pale golden. Do not let it burn.

  3. Increase the heat, add the prawns and cook for 2 to 3 minutes per side until pink and just cooked through.

  4. Squeeze over the lime juice and toss for 30 seconds.

  5. Scatter with coriander.

  6. Serve at once with rice or warm tortillas, spooning over the garlic butter.
