Salsa Verde

A bright, tangy tomatillo salsa with fresh chillies, coriander and lime, ideal for tacos and grilled meat.

Ingredients

  • 2 x 400g tins tomatillos, drained
  • 2 jalapeños, roughly chopped
  • 1/2 white onion, roughly chopped
  • 2 cloves garlic, peeled
  • Small bunch fresh coriander
  • Juice of 1 lime
  • 1/2 tsp fine salt
  • 1/2 tsp caster sugar
  • 1 tbsp vegetable oil

Method

  1. Heat a dry frying pan over a high heat and char the tomatillos, jalapeños, onion and garlic for 6 to 8 minutes until blackened in places.

  2. Tip into a blender and add the coriander, lime juice, salt and sugar.

  3. Blend until you reach the texture you like, either rough or smooth.

  4. Heat the oil in a small pan until hot, pour in the salsa carefully and simmer for 3 to 4 minutes to deepen the flavour.

  5. Taste and adjust the seasoning with salt and lime.

  6. Cool and serve with tacos, enchiladas, grilled meat or tortilla chips. Keeps for 5 days in the fridge.
