Wine List Margin Analyser

How this tool works

Enter each wine with its GP% and the number of bottles sold in your chosen period. The tool calculates your list averages and plots every wine into one of four categories, using the same logic as classic menu engineering applied to a wine list.

Stars

High GP, high popularity — your best-performing bottles. Keep prominent placement (by-the-glass boards, top of list sections) and never discount them as a promotional gesture.

Workhorses

High popularity but thin margin — often familiar, safe-choice bottles guests order without much thought. Consider a modest price increase; well-known, popular wines can usually absorb it with minimal volume impact.

Puzzles

Good margin but under-ordered. Often interesting or less familiar wines the list needs for range and credibility, but which need staff recommendation, better list positioning, or a by-the-glass offering to drive volume.

Dead Stock

Low margin and low volume — tying up cellar space and working capital with little return. Unless it serves a strategic purpose (a benchmark reference wine, a specific food-pairing role), these are the first candidates to drop at the next list revision.

List Length and Working Capital

A shorter, better-curated list with a higher proportion of Stars and Workhorses typically outperforms a long list padded with Dead Stock — both in gross profit and in reduced capital tied up in slow-moving stock.

Wine list engineering is a strategic guide, not a prescription. Results should be interpreted alongside sommelier knowledge, food pairing strategy and brand positioning. JWBIZ Ltd accepts no liability for wine list decisions made on the basis of this tool.
