Bifanas — Portuguese Marinated Pork Sandwiches

Thin slices of pork marinated in garlic, white wine and paprika, simmered and piled into soft rolls.

Ingredients

  • 600g pork loin or leg steaks, sliced as thinly as possible
  • 4 cloves garlic, crushed
  • 2 bay leaves
  • 2 tsp paprika
  • 150ml dry white wine
  • 3 tbsp olive oil
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp lard or butter
  • 4 crusty white rolls, split
  • Mustard, to serve (optional)

Method

  1. Mix the pork with the garlic, bay leaves, paprika, wine, olive oil, salt and pepper in a bowl. Cover and marinate in the fridge for at least 4 hours, or overnight.

  2. Melt the lard in a large frying pan over a medium-high heat. Add the pork and marinade and cook for 12 to 15 minutes, turning, until the pork is cooked through and the sauce has reduced to a glossy coating.

  3. Remove the bay leaves.

  4. Pile the pork into the rolls, spooning over some of the pan juices, and add mustard if you like.
