Carne de Porco à Portuguesa — Portuguese Pork with Potatoes & Peppers

Ingredients

  • 700g pork shoulder, cut into 3cm cubes
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 3 cloves garlic, crushed
  • 2 red peppers, sliced
  • 1 tbsp paprika
  • 1 x 400g tin chopped tomatoes
  • 150ml dry white wine
  • 2 bay leaves
  • 500g potatoes, peeled and cut into 3cm chunks
  • Salt and black pepper to taste
  • Chopped fresh coriander, to serve

Method

  1. Season the pork. Heat the oil in a large casserole and brown the pork in batches for 5 minutes per batch. Set aside.

  2. Cook the onion for 6 minutes, then add the garlic, peppers and paprika and cook for 4 minutes.

  3. Add the tomatoes, wine and bay leaves and return the pork. Cover and simmer for 30 minutes.

  4. Add the potatoes and cook for 25 minutes until tender and the sauce has thickened.

  5. Remove the bay leaves, season and scatter with coriander.
