Cataplana de Marisco — Seafood Cataplana
Prawns, clams and white fish steamed with tomato, peppers, chouriço and white wine in a sealed pan.
Ingredients
- 2 tbsp olive oil
- 1 large onion, sliced
- 1 red pepper, sliced
- 4 cloves garlic, sliced
- 100g Portuguese chouriço, sliced
- 100g presunto or smoked bacon, diced
- 1 x 400g tin chopped tomatoes
- 150ml dry white wine
- 2 bay leaves
- 1 tsp paprika
- 400g firm white fish fillets, cut into chunks
- 500g clams, soaked and rinsed
- 8 raw king prawns, shell on
- Small bunch fresh coriander, chopped
- Salt and black pepper to taste
Method

Heat the oil in a large lidded casserole or cataplana and cook the onion and pepper for 8 minutes. Add the garlic, chouriço and presunto and cook for 4 minutes.

Add the tomatoes, wine, bay leaves and paprika and simmer for 10 minutes.

Add the fish, clams and prawns, cover tightly and cook over a medium heat for 8 to 10 minutes until the clams have opened and the fish and prawns are cooked. Discard any unopened clams.

Remove the bay leaves, season, stir in the coriander and serve with crusty bread or boiled potatoes.
