Gambas à Alhinho — Garlic Prawns

Ingredients

  • 500g raw peeled king prawns
  • 5 tbsp olive oil
  • 6 cloves garlic, thinly sliced
  • 1 dried or fresh red chilli, sliced
  • 1 bay leaf
  • 50ml dry white wine
  • Juice of 1/2 lemon
  • 2 tbsp chopped fresh coriander or flat-leaf parsley
  • Salt to taste
  • Crusty bread, to serve

Method

  1. Pat the prawns dry and season lightly with salt.

  2. Heat the olive oil in a large frying pan over a medium heat. Add the garlic, chilli and bay leaf and cook for 1 minute until fragrant, being careful not to brown the garlic.

  3. Increase the heat, add the prawns and cook for 1 to 2 minutes per side until pink.

  4. Pour in the wine and lemon juice and bubble for 1 minute.

  5. Scatter with the coriander and serve at once in the pan or a warm dish with bread to mop up the garlic oil.
