Bife à Portuguesa — Portuguese Steak with Ham & Egg

Pan-fried steak in a garlic and white wine sauce, served with cured ham, a fried egg and chips.

Ingredients

  • 2 x 200g sirloin or rump steaks
  • 2 tbsp olive oil
  • 30g butter
  • 3 cloves garlic, sliced
  • 1 bay leaf
  • 100ml dry white wine
  • 2 slices Portuguese presunto or Serrano ham
  • 2 eggs
  • Salt and black pepper to taste
  • Chips and a green salad, to serve

Method

  1. Season the steaks well. Heat the oil in a frying pan over a high heat and cook the steaks for 3 minutes per side for medium-rare, or longer to taste. Remove and keep warm.

  2. Reduce the heat, add the butter, garlic and bay leaf and cook for 1 minute.

  3. Pour in the wine and boil for 3 minutes until reduced by half. Return the steaks briefly and spoon over the sauce.

  4. Fry the ham for 1 minute, then fry the eggs in the same pan.

  5. Top each steak with ham and a fried egg, spoon over the sauce and serve with chips and salad.
