Bolinhos de Bacalhau — Cod & Potato Fritters

Small round fritters of salt cod and potato with fresh coriander and a hint of lemon zest.

Ingredients

  • 250g salt cod (bacalhau)
  • 350g floury potatoes, peeled and quartered
  • 1 small onion, grated
  • 2 tbsp chopped fresh coriander
  • Zest of 1/2 lemon
  • 2 eggs
  • 2 tbsp plain flour
  • Black pepper to taste
  • Sunflower oil, for shallow frying

Method

  1. Soak the cod in cold water in the fridge for 24 to 48 hours, changing the water regularly. Drain, then simmer in fresh water for 10 minutes. Cool, remove skin and bones and shred.

  2. Boil the potatoes until tender, drain and mash until smooth. Cool for 10 minutes.

  3. Mix the potato, cod, onion, coriander, lemon zest, eggs, flour and pepper to a firm mixture. Taste before adding salt.

  4. Roll into 18 small balls and flatten them slightly.

  5. Heat 1cm of oil in a large frying pan over a medium-high heat and fry the fritters for 3 to 4 minutes per side until golden. Drain and serve warm.
