Chouriço Assado — Flame-Roasted Portuguese Chouriço

Ingredients

  • 400g Portuguese chouriço (from delis or larger supermarkets), a whole piece
  • 2 tbsp aguardente, brandy or dry white wine
  • 1 tbsp olive oil
  • Crusty bread, to serve
  • Pickled peppers, to serve (optional)

Method

  1. Slash the chouriço several times on each side to help the flavours escape.

  2. If you have a clay chouriço grill (assador), place the sausage on it with the brandy in the base and flame it. If not, place the sausage in a heavy ovenproof dish and add the brandy.

  3. Heat the oven to 200°C (180°C fan) and roast the sausage for 15 minutes, turning halfway, until the skin is crisp and blistered and the fat is sizzling.

  4. Slice thickly and serve straight away with crusty bread.
