Pica-Pau — Marinated Beef Bites

Tender beef strips cooked in garlic, white wine and mustard, served with pickled gherkins.

Ingredients

  • 500g rump or sirloin steak, cut into 2cm strips
  • 3 cloves garlic, crushed
  • 1 bay leaf
  • 100ml dry white wine
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1 tbsp Dijon mustard
  • 1 tsp paprika
  • Salt and black pepper to taste
  • 6 small pickled gherkins, sliced
  • Crusty bread, to serve

Method

  1. Mix the beef with the garlic, bay leaf, wine, 1 tsp salt and pepper. Marinate in the fridge for 2 hours.

  2. Drain the beef, keeping the marinade, and pat the meat dry.

  3. Heat the oil in a large frying pan over a high heat and fry the beef in two batches for 2 to 3 minutes until browned. Set aside.

  4. Pour the marinade into the pan with the butter, mustard and paprika and boil for 3 to 4 minutes until reduced to a glossy sauce.

  5. Return the beef to the pan, toss for 1 minute and serve with the gherkins and bread.
