Lombo de Porco Assado — Portuguese Roast Pork

Roast loin of pork marinated in garlic, white wine and paprika, served with its roasting juices.

Ingredients

  • 1.5kg boneless pork loin, rolled
  • 6 cloves garlic, crushed
  • 2 tbsp paprika
  • 1 tbsp salt
  • 1 tsp black pepper
  • 250ml dry white wine
  • 3 bay leaves
  • 3 tbsp olive oil
  • 800g potatoes, peeled and cut into wedges
  • 250ml chicken stock

Method

  1. Mix the garlic, paprika, salt, pepper, 100ml of the wine and the olive oil. Rub over the pork, add the bay leaves, cover and marinate in the fridge for at least 4 hours, or overnight.

  2. Heat the oven to 200°C (180°C fan). Place the pork in a roasting tin with the potatoes around it and pour in the remaining wine and stock.

  3. Roast for 20 minutes, then reduce to 180°C (160°C fan) and roast for 1 hour to 1 hour 10 minutes, basting occasionally, until the pork reaches 70°C in the centre.

  4. Rest the pork for 15 minutes, then slice and serve with the potatoes and juices from the tin.
