Bulgur Pilavı — Turkish Bulgur Pilaf with Tomato and Peppers

Ingredients

  • 2 tbsp olive oil
  • 1 tbsp butter
  • 1 onion, finely chopped
  • 1 green pepper, finely diced
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 2 ripe tomatoes, grated
  • 250g coarse bulgur wheat, rinsed
  • 500ml hot vegetable stock
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Chopped fresh flat-leaf parsley, to serve

Method

  1. Heat the oil and butter in a pan over a medium heat. Cook the onion and pepper for 6 minutes until soft.

  2. Stir in the tomato paste and tomatoes and cook for 3 minutes.

  3. Add the bulgur and stir for 2 minutes until coated, then pour in the stock and add the salt and pepper.

  4. Bring to the boil, cover, reduce to the lowest heat and cook for 12 to 15 minutes until the liquid is absorbed.

  5. Take off the heat, cover the pan with a clean tea towel under the lid and rest for 10 minutes. Fluff with a fork and scatter with parsley.
