Zeytinyağlı Taze Fasulye — Green Beans Braised in Olive Oil

Ingredients

  • 600g flat green beans, trimmed and halved
  • 4 tbsp extra virgin olive oil
  • 1 large onion, sliced into half-moons
  • 3 cloves garlic, sliced
  • 3 ripe tomatoes, grated (or 1 x 400g tin chopped tomatoes)
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 1 tsp caster sugar
  • 250ml hot water
  • Salt to taste
  • Juice of 1/2 lemon
  • Chopped fresh dill or parsley, to serve

Method

  1. Heat the olive oil in a wide pan over a medium heat. Cook the onion for 8 minutes until soft, then add the garlic for 1 minute.

  2. Stir in the tomato paste, then add the tomatoes, sugar and a pinch of salt and cook for 5 minutes.

  3. Add the beans and hot water, cover and simmer gently for 25 to 30 minutes until the beans are very tender and the sauce is thick, adding a splash of water if needed.

  4. Stir in the lemon juice and season to taste. Cool to room temperature and serve topped with dill or parsley.
