Kuzu Şiş — Turkish Lamb Shish Kebab

Tender cubes of lamb marinated in onion, olive oil and herbs, grilled on skewers until charred.

Ingredients

  • 800g lamb leg or shoulder, trimmed and cut into 3cm cubes
  • 1 large onion, grated
  • 3 tbsp olive oil
  • 3 cloves garlic, crushed
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • Juice of 1/2 lemon
  • 2 long green peppers and 4 small tomatoes, for grilling
  • 4 to 6 skewers (soak wooden ones in water for 30 minutes)

Method

  1. Mix the onion, olive oil, garlic, tomato paste, oregano, paprika, salt, pepper and lemon juice in a bowl. Add the lamb, mix well, cover and marinate in the fridge for at least 4 hours, or overnight.

  2. Thread the lamb onto skewers, packing it fairly tightly. Thread the peppers and tomatoes onto separate skewers.

  3. Heat a barbecue or grill to high. Cook the lamb for 8 to 12 minutes, turning, until charred outside and just pink in the middle, or longer to taste. Grill the vegetables for 5 to 6 minutes.

  4. Rest the lamb for 3 minutes, then serve with rice or flatbread and the grilled vegetables.
