İskender Kebabı — Bursa-Style Doner with Tomato Sauce and Yogurt

Ingredients

  • 500g thinly sliced cooked doner meat (see our Döner Kebab recipe), or thinly sliced roast lamb and beef
  • 4 pide or soft flatbreads, cut into 2cm cubes
  • 250g thick plain yogurt
  • For the tomato sauce: 1 tbsp olive oil
  • For the tomato sauce: 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • For the tomato sauce: 1 x 400g tin chopped tomatoes
  • For the tomato sauce: 100ml hot water
  • For the tomato sauce: pinch of salt
  • For the butter: 60g butter
  • For the butter: 1 tsp paprika
  • To serve: grilled tomatoes and green peppers

Method

  1. Heat the oil for the sauce in a pan, stir in the tomato paste for 1 minute, then add the tomatoes, water and salt. Simmer for 15 minutes until thick and glossy.

  2. Warm the sliced doner meat in a frying pan with a splash of water for 3 minutes.

  3. Toast the bread cubes in a dry pan or the oven until lightly crisp, then divide between four warm plates.

  4. Arrange the meat over the bread and spoon the hot tomato sauce over the top.

  5. Melt the butter with the paprika until sizzling and pour over the meat at the table. Serve with yogurt and grilled tomatoes and peppers.
