Tavuk Sote — Turkish Chicken Sauté with Peppers and Tomatoes

Ingredients

  • 600g boneless chicken thighs or breasts, cut into bite-size pieces
  • 2 tbsp olive oil
  • 1 large onion, sliced
  • 2 green peppers, sliced
  • 3 cloves garlic, sliced
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 3 ripe tomatoes, chopped
  • 1 tsp paprika
  • 1 tsp dried oregano
  • 100ml hot water
  • Salt and black pepper to taste
  • Chopped fresh flat-leaf parsley, to serve

Method

  1. Season the chicken. Heat half the oil in a large frying pan over a high heat and fry the chicken for 6 to 8 minutes until golden. Set aside.

  2. Add the remaining oil and cook the onion for 5 minutes, then add the peppers and garlic and cook for 4 minutes.

  3. Stir in the tomato paste, paprika and oregano for 1 minute, then add the tomatoes and water.

  4. Return the chicken to the pan and simmer for 10 minutes until the chicken is cooked through and the sauce has thickened.

  5. Season to taste, scatter with parsley and serve with rice or bread.
