Domates Çorbası — Turkish Tomato Soup

A smooth, buttery tomato soup thickened with a little flour and finished with grated kaşar cheese.

Ingredients

  • 40g butter
  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 tbsp plain flour
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 1 x 400g tin chopped tomatoes
  • 800ml vegetable stock
  • 1 tsp caster sugar
  • Salt and black pepper to taste
  • Grated kaşar cheese (or mild Cheddar), to serve
  • Dried mint or fresh parsley, to serve

Method

  1. Heat the butter and oil in a pan over a medium heat. Cook the onion for 5 minutes until soft.

  2. Stir in the flour and cook for 1 minute, then add the tomato paste and cook for 1 minute more.

  3. Add the chopped tomatoes, stock and sugar. Bring to the boil and simmer for 20 minutes.

  4. Blend until smooth, season with salt and pepper and reheat gently.

  5. Serve topped with grated cheese and a sprinkle of dried mint or parsley, with toasted bread.
