Karides Güveç — Turkish Baked Prawns with Tomato, Peppers and Cheese

Prawns baked bubbling in a garlicky tomato and pepper sauce under melted kaşar cheese.

Ingredients

  • 500g raw peeled king prawns
  • 3 tbsp olive oil
  • 1 onion, finely chopped
  • 2 green peppers, diced
  • 3 cloves garlic, sliced
  • 1 tbsp Turkish tomato paste (domates salçası) or tomato purée
  • 3 ripe tomatoes, chopped
  • 1 tsp paprika
  • 1/2 tsp pul biber (Turkish chilli flakes)
  • 100ml hot water
  • Salt and black pepper to taste
  • 150g kaşar cheese (or mozzarella and mild Cheddar), grated
  • Chopped fresh flat-leaf parsley, to serve

Method

  1. Heat the oven to 220°C (200°C fan). Heat the oil in a frying pan and cook the onion and peppers for 6 minutes. Add the garlic for 1 minute and the tomato paste for 1 minute.

  2. Add the tomatoes, paprika, pul biber and hot water and simmer for 8 minutes until slightly thickened. Season to taste.

  3. Stir in the prawns and cook for 1 minute only.

  4. Divide between four small ovenproof dishes or one larger dish and cover with the cheese.

  5. Bake for 10 to 12 minutes until the cheese is melted and golden and the prawns are cooked through. Scatter with parsley and serve with bread.
