Urfa Kebabı — Mild Spiced Minced Lamb Kebab

The milder cousin of the Adana, a lamb mince kebab with garlic, cumin and no chilli heat.

Ingredients

  • 700g lamb mince (20% fat)
  • 1 small onion, grated and squeezed dry
  • 3 cloves garlic, crushed
  • 1 tsp ground cumin
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 2 tbsp finely chopped fresh flat-leaf parsley
  • 4 flat metal skewers
  • To serve: flatbreads, sliced red onion with sumac, grilled tomatoes and long green peppers

Method

  1. Knead the lamb, onion, garlic, cumin, paprika, salt, pepper and parsley together for 5 minutes until the mixture is sticky and cohesive. Cover and chill for 30 minutes.

  2. Heat a barbecue or grill to high. With wet hands, divide the mixture into 4 and mould each piece around a flat skewer into a long, thin sausage.

  3. Grill for 4 to 5 minutes per side until browned and cooked through.

  4. Serve on flatbread with the onion salad and grilled tomatoes and peppers.
