Cacık — Yogurt, Cucumber and Mint

A cooling Turkish yogurt, cucumber and garlic meze, perfect with kebabs and grilled meat.

Ingredients

  • 500g thick plain whole milk yogurt
  • 1 large cucumber, peeled and finely diced or grated
  • 2 cloves garlic, crushed
  • 1 tbsp dried mint, or 2 tbsp chopped fresh mint
  • 2 tbsp extra virgin olive oil, plus extra to serve
  • 1 tbsp white wine vinegar or lemon juice
  • 100ml cold water (optional)
  • 1/2 tsp fine salt

Method

  1. If grating the cucumber, sprinkle with a pinch of salt, leave for 5 minutes and squeeze out the excess water.

  2. Whisk the yogurt, garlic, olive oil, vinegar and salt together in a bowl. Add the cold water for a thinner, more soup-like consistency if you prefer.

  3. Stir in the cucumber and half the mint.

  4. Chill for 30 minutes. Serve drizzled with olive oil and sprinkled with the remaining mint.
