Haydari — Thick Garlic and Herb Yogurt Meze

A thick, creamy strained yogurt dip with white cheese, garlic, dill and mint.

Ingredients

  • 500g thick plain Greek-style yogurt
  • 100g white brined cheese (beyaz peynir) or feta, crumbled finely
  • 2 cloves garlic, crushed
  • 2 tbsp chopped fresh dill
  • 1 tbsp chopped fresh mint
  • 2 tbsp extra virgin olive oil, plus extra to serve
  • Pinch of salt (taste first, as the cheese is salty)
  • Pul biber (Turkish chilli flakes), to serve

Method

  1. If the yogurt is loose, strain it through muslin or a fine sieve for 30 minutes.

  2. Mash the cheese with a fork until nearly smooth, then mix into the yogurt with the garlic.

  3. Stir in the dill, mint and olive oil. Taste and add salt only if needed.

  4. Spoon into a bowl, drizzle with olive oil, sprinkle with pul biber and serve with bread.
