Sütlaç — Turkish Baked Rice Pudding
A creamy rice pudding with a lightly caramelised, golden top, baked in individual dishes.
Ingredients
- 80g short grain or pudding rice, rinsed
- 250ml water
- 1 litre whole milk
- 150g caster sugar
- 2 tbsp cornflour mixed with 4 tbsp cold milk
- 1 egg yolk
- 1 tsp vanilla extract
- Ground cinnamon, to serve (optional)
Method

Simmer the rice in the water for 15 minutes until tender and the water is nearly absorbed.

Add the milk and bring to a gentle boil, then simmer for 15 minutes, stirring often.

Stir in the sugar, then slowly pour in the cornflour mixture, stirring constantly. Simmer for 5 minutes until thick. Whisk a ladleful into the egg yolk and stir back into the pan with the vanilla.

Divide between six ovenproof bowls and cool for 15 minutes.

Heat the grill to its highest setting and grill the puddings for 3 to 5 minutes until the tops are spotted with brown. Alternatively, bake at 240°C (220°C fan) for 8 to 10 minutes.

Cool, then chill for at least 2 hours. Serve cold, dusted with cinnamon if you wish.
