Sigara Böreği — Crispy Filo Rolls with Cheese

Ingredients

  • 6 sheets filo pastry (270g pack, defrosted)
  • 250g white brined cheese (beyaz peynir) or feta, crumbled
  • 1 small bunch fresh flat-leaf parsley, finely chopped
  • 1 egg
  • 1/2 tsp black pepper
  • 1 egg yolk, for sealing
  • Sunflower oil, for frying

Method

  1. Mix the cheese, parsley, egg and pepper in a bowl.

  2. Lay a sheet of filo on a board with a long edge towards you and cut into 3 triangles. Keep the remaining sheets covered with a damp tea towel.

  3. Place a heaped teaspoon of the filling near the wide end of a triangle, fold in the sides, then roll up tightly like a cigar. Seal the tip with a dab of egg yolk. Repeat to make about 18 rolls.

  4. Heat 3cm of oil in a deep frying pan over a medium heat to 170°C. Fry the rolls in batches for 2 to 3 minutes until golden, turning.

  5. Drain on kitchen paper and serve hot with a yogurt dip or salad.
