Ingredients

  • 2 tbsp vegetable oil
  • 1 large onion, finely chopped
  • 3 cloves garlic, crushed
  • 1 tbsp finely grated fresh ginger
  • 500g lean beef mince
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 1 tsp turmeric
  • 1/2 tsp chilli powder
  • 2 tbsp tomato purée
  • 200ml beef stock
  • 200g frozen peas
  • 1 tsp garam masala
  • 2 tbsp chopped fresh coriander
  • 4 flatbreads or naan, to serve
  • Salt to taste

Method

  1. Heat the oil in a large deep pan over a medium heat. Cook the onion for 6 minutes until golden. Add the garlic and ginger for 1 minute.

  2. Turn up the heat, add the mince and fry for 6 minutes, breaking it up, until browned.

  3. Stir in the cumin, coriander, turmeric, chilli powder and tomato purée for 1 minute.

  4. Pour in the stock, season with salt and simmer for 6 minutes until most of the liquid has evaporated.

  5. Stir in the peas and garam masala and cook for 3 minutes. Scatter with coriander and serve with warm flatbreads.
