One-Pan Beef Taco Rice

Spiced beef mince, rice, tomato and sweetcorn cooked together and topped with melted cheese.

Ingredients

  • 1 tbsp vegetable oil
  • 1 onion, finely chopped
  • 500g lean beef mince
  • 2 tsp smoked paprika
  • 2 tsp ground cumin
  • 1 tsp garlic granules
  • 250g long grain rice
  • 400g tin chopped tomatoes
  • 500ml hot beef stock
  • 200g tinned sweetcorn, drained
  • 150g mature Cheddar, grated
  • 2 tbsp chopped fresh coriander
  • Soured cream, to serve
  • Salt and black pepper to taste

Method

  1. Heat the oil in a large lidded pan over a medium-high heat. Cook the onion for 3 minutes, add the mince and fry for 5 minutes until browned.

  2. Stir in the paprika, cumin and garlic granules for 1 minute.

  3. Add the rice, tomatoes and stock. Season, bring to the boil, cover and simmer on a low heat for 12 minutes.

  4. Stir in the sweetcorn, scatter over the Cheddar, cover and cook for 3 minutes until melted.

  5. Top with coriander and serve with soured cream.
